Chick Pea, Lentil and Cous Cous Salad

chick pea, lentil and cous cous saladIngredients:
  • 1 x 400g tin chick peas – drained and washed
  • 1/2 cup (dry measure) cous cous – cook as per instructions
  • 1 x 400g tin green lentils in water (or 1/2 cup raw measure) – drained and rinsed or cooked until tender
  • 1 whole red onion – chopped
  • 1 each of red, yellow and green capsicum – chopped into cubes
  • 1 whole bunch of coriander – finely chopped
  • Juice of 2-3 limes or lemons
  • 2 tbsp. olive oil
  • Salt and pepper to taste
  • 1 bird’s eye chilli (if desired)
Method:
Combine all ingredients and season with lime or lemon juice, salt and pepper to your liking!
