Almond Encrusted Halibut


Sensationally simple, halibut takes on a creative crunch from almonds

Ingredients

  • 1/4 cup(s) organic wheat germ
  • 24 ounce(s) Pacific halibut (6 ounce fillets)
  • 1/2 cup(s) organic almonds, slivered
  • 1 large organic egg
  • 2 Tbsp(s) fresh parsley, chopped
  • 1/2 tsp(s) sea salt
  • 1 whole organic lemon, cut into wedges
  • 1/4 cup(s) organic milk
  • 1/4 tsp(s) freshly ground black pepper

Preparation

  1. Preheat oven to 350 F.
  2. In shallow dish, whisk together egg and milk.
  3. Stir together wheat germ, almonds, and parsley in a separate dish.
  4. Sprinkle halibut with sea salt and pepper.
  5. Dip fish in egg mixture, then in almond mixture.
  6. Place fish in glass baking dish and bake 5 minutes per 1 inch of thickness.
  7. Serve with lemon wedges.
